The highly acclaimed Sumava Farm is a true beacon of excellence within Costa Rica's specialty coffee landscape, famously securing first place honors at the prestigious 2016 Costa Rica Cup of Excellence (COE) competition. The estate operates at the cutting edge of the industry, experimenting with rare botanical varieties and progressive processing methods to redefine premium quality.
This exceptional "Black Moon Kenya" release is a micro-lot composed exclusively of highly coveted Kenyan-variety cherries harvested at peak maturity.
Cultivated along the high-elevation volcanic slopes of the West Valley at heights stretching up to 1,790 meters, the slow maturation of the cherries locks in a remarkably complex sugar structure.
The hand-picked cherries are carefully placed in specialized baskets to rest in the refreshing shade for four days, allowing the sugars to concentrate naturally. The pristine parchment is then tank-fermented for 24 hours before a specialized machine mechanically removes the remaining mucilage. This hybrid technique unlocks an extraordinary expression of a classic Kenyan profile grown in Costa Rican soil.
Opening with a remarkably clean and bright orange citrus acidity, followed by a deeply complex sweetness of ripe dark cherry and succulent wild berries. The cup has definition and structure, finishing with a beautifully balanced, long-lasting sweetness.
